Serra da Canastra, in the Cerrado Mineiro region, is one of the most renowned coffee-growing areas in Brazil. The plantations lie at an altitude of around 1,200–1,400 metres above sea level, surrounded by native vegetation that preserves local biodiversity. The climate, soil, and elevation allow the coffee trees to ripen slowly, resulting in greater aromatic complexity.

São Pedro da Canastra is a family-run farm managed by Edson Luiz Ignacio, Mauricio Mendes, and Warley Oliveira. It covers just over 1,000 hectares, half of which is dedicated to coffee cultivation, while the rest remains natural vegetation. The owners run the farm with a strong focus on sustainability and environmental protection, combining traditional farming methods with care for the ecosystem.

This lot underwent a 36-hour natural fermentation without added yeast, which is key to its flavour profile. Natural fermentation allows the beans to develop subtle fruitiness and sweetness in a delicate, elegant way, without becoming overpowering. Thanks to this process, the coffee retains its freshness while remaining very espresso-friendly — the acidity and fruit notes are present, but well controlled, making for a harmonious and enjoyable everyday cup.

In the cup, Acaua reveals red fruit, juicy peach, and delicate blueberry, complemented by notes of port, honey, maple syrup, and subtle cocoa. The darker roast brings out a full body and added depth, making this coffee an excellent choice for espresso machines, moka pots, and other pressure-brewing methods. These are elegant, well-balanced beans that shine as espresso with a pleasing fruity-sweet character.
