Serra da Canastra in the Cerrado Mineiro region is one of the most renowned coffee-growing areas in Brazil. The plantations are located at around 1,200–1,400 metres above sea level, surrounded by native vegetation that preserves local biodiversity. The climate, soil, and elevation allow the coffee trees to ripen slowly, resulting in greater aromatic complexity.

São Pedro da Canastra is a family-run farm managed by Edson Luiz Ignacio, Mauricio Mendes, and Warley Oliveira. It covers just over 1,000 hectares, half of which is dedicated to coffee cultivation, while the rest remains natural vegetation. The owners run the farm with a strong focus on sustainability and environmental protection, combining traditional farming methods with care for the ecosystem.

This lot underwent a 36-hour fermentation using selected LALCAFÉ BRIOSA™ yeast, which has a major impact on the coffee’s flavour profile. The yeast helps control the process, improving stability and cup clarity while bringing out the coffee’s full fruity sweetness.

Thanks to this fermentation, the coffee gains brighter acidity and a fresher, more vibrant character, giving the cup plenty of energy and liveliness. Expect juicy aromas of tropical and forest fruits, with delicate notes of honey, red wine, and chocolate liqueur.

The medium roast highlights the coffee’s natural sweetness and freshness, making it an excellent choice for dripper, Chemex, AeroPress, and other filter brewing methods. It is a complex, aromatic, and lively coffee for those looking for a full spectrum of fruity and sweet notes, with fermentation playing a key role in intensifying both flavour and freshness.
