Rapeseed honey with Ocoa coffee

We are proud to present the first result of our collaboration with our friends from Przybrodzin’s beekeeping farm in Greater Poland: rapeseed honey with coffee from the Dominican Republic!
This project had been brewing in our minds for a long time, but along the way we had not met anyone with whom we felt the right chemistry to bring such ideas to life. That changed when we met the Imbiorowicz family, a married couple running a family-owned apiary and meadery in the beautiful area near Powidz in Greater Poland.
Once the hard-working bees have done their part, we step in with our beans from the Dominican Republic — roasted in a rather specific way, according to a profile developed especially for this purpose. We then grind the coffee very finely (much finer than for espresso), so that no coffee particles remain in the mouth, and our hosts at the apiary carefully blend it all in a 97% to 3% ratio.
Thanks to this, the honey has a very distinct coffee note, yet one that is not overwhelming or unpleasant. And because this is truly artisanal honey combined with truly artisanal coffee (not instant or extracted), it behaves exactly as proper craft honey should and retains its qualities for a long time. What it leaves on the palate is simply the pleasant, sweet taste of honey with a clearly noticeable hint of coffee — but without any “grounds”!
We chose beans from the Ocoa region of the Dominican Republic for a reason — thanks to their quality, natural sweetness, size, and inner density, they are perfect for roasting according to the profile we developed for a honey blend. The same goes for the honey itself — after many tests, we concluded that buckwheat and rapeseed honey work best (even though multifloral honey would have been the easiest option to use). If you have ever tried coffee honey before and were not impressed, be sure to give our version a second chance.
These honeys are not only a fantastic addition to pancakes, cakes, or creams. They are also an excellent sweet dessert on their own and a natural, wholesome energy booster!
